When you try your free dressing, remember to look for the krispkut™ salad to match. krispkut™salads and dressings are colour-coded and have a recipe on pack to help you create a perfect salad for any occasion.
Summer-lovers recipe: Mesclun with Herbs & Aubergine Steaks with Apricot & Feta
Ingredients
1 tbsp olive oil
1 tbsp lemon juice
¼ tsp salt
1 large aubergine
130g Krispkut™ Mesclun with Herbs
150g ready-to-eat dried apricots, sliced
150g feta, crumbled
krispkut™ Hempseed & Honey Vinaigrette
Method
Heat a barbecue or grill pan to hot.
In a small bowl mix together the olive oil, lemon juice and salt.
Slice the aubergine into 1.5cm thick slices and brush with the oil mixture.
Cook the aubergine steaks for 2-3 mins each side until tender. Place on a serving platter.
In a bowl, combine the krispkut™ Mesclun with Herbs, dried apricots and feta cheese with krispkut™ Hempseed & Honey Vinaigrette to taste. Arrange on top of the aubergine steaks.
Prep time: 20 mins
Cooking time: 6 mins
Serves 4-6

Are you going stir crazy?
If not, then you most certainly should be!
By popular demand Krispkut™ has re-launched its Stir Crazy Singaporean Style mix. We’ve reduced the pack size to a handy 475g bag, offering great value and sealed in freshness. With this tasty vege combination, a healthy and delicious stir fry is just minutes away.
Try this recipe for Gado Gado – an Indonesian stir fry dish made with tasty peanut sauce.
Gado Gado
(stir fried vegetables with peanut sauce)
This recipe is also great using fried tofu as well as, or instead of, the eggs.
Serves 4
3 tablespoons peanut oil
2 cloves garlic, crushed
half a cup peanut butter
Krispkut™ Stir Crazy Singaporean Style Stir Fry Mix 475g
half a cup light coconut milk
500g small waxy potatoes
4 eggs, boiled and quartered
Heat one tablespoon of the oil in a frying pan over a medium heat and cook the garlic 30 seconds. Stir in the peanut butter, then slowly stir in the sauce from the pack and the coconut milk. Stir for 2 minutes until thickened. Add a little water if the sauce is too thick. Set aside.
Boil the potatoes in water until tender. Drain and cool. Cut the potatoes in half. Heat the remaining oil in a large frying pan or wok and add the potato halves and cook until browned. Add Krispkut™ Stir Crazy and stir fry for a few minutes until tender then stir in the noodles from the pack.
Arrange the vegetables on a platter with the eggs on top then drizzle with the peanut sauce.

Summer-lovers will no doubt be over the moon that daylight savings is here at last! It seems that we all come out of hibernation as the evenings get longer (and warmer!) and start to enjoy getting off the couch, getting dressed up and going out for an evening with friends.

Fancy lettuce, haloumi and sautéed cherry tomato salad
Ingredients
2 tbsp olive oil
1 cup fresh breadcrumbs
2 tbsp capers, drained (optional)
2 cloves garlic, finely sliced
250g cherry tomatoes
2 tbsp Krispkut™ Balsamic & Olive Oil Vinaigrette + extra to serve
200g haloumi cheese
120g Krispkut™ Fancy Lettuce Blend

Method
Heat 1 tbsp of olive oil in a frying pan over a medium heat.
Add the breadcrumbs, capers and garlic slices and cook, tossing around the pan, for 5 mins until golden.
Set aside to cool.
Heat the frying pan to medium and add the cherry tomatoes and 2 tbsp of vinaigrette.
Cook, tossing the tomatoes around the pan, for 5 mins.
Set aside to cool.
Pat the haloumi dry with kitchen towel.
Heat the frying pan to medium/hot and add the remaining tablespoon of oil.
Cook the haloumi slices for 2-3 mins each side until golden.
Arrange the Krispkut™ Fancy Lettuce Blend on a serving dish and toss with vinaigrette to taste.
Top with the cherry tomatoes, haloumi and breadcrumbs.
Prep time: 15 mins
Cooking time: 15 mins
Serves 4

Hi again, salad junkies, and welcome to the latest edition of the Krispkut™ Lettuce Talk newsletter. This season’s issue is all about changing perceptions: salads are thought to be healthy, but not usually hearty, and winter meals are thought to be hearty, but perhaps not so healthy. Comfort food lovers will delight in the knowledge that there are ways to enjoy Krispkut™ salads in the depths of the winter cold. Read on….
Chills and thrills
The winter chills are slowly creeping in, and the thought of winter looming can be enough to send shivers down anyone’s spine! When the days start to get cold, most of us hole up and reach for a pile of warm, rich comfort food and, sadly, the fresh salads of summer can start to slip… however! This winter, Krispkut™ has a range of winter salad solutions that can get you back on track with your delicious and nutritious salad faves.
Winter salad? Surely not...
All your notions that salad is a summer food are going to have to be shut out in the cold. Krispkut™ has just launched a brand-new seasonal release – the “Winter Salad” - for the cooler days and warmer meals that winter brings.
The newest in the Krispkut™ range, the “Winter Salad – Spinach & Cavolo Nero” is a flavoursome blend of green spinach, red spinach and cavolo nero leaves. This dark, leafy green combination is decorative, yet highly nutritious – full of vitamins and antioxidants.
Best of all, the small and tender leaves in this blend are designed to be great when served cold or warm. Unlike standard lettuce, this leaf mix can be successfully heated for warm salads, or stirred through hot, hearty winter dishes.
While this mix still works as a great cold salad base, why not try adding it to casseroles, soups, curries, or pasta dishes? We guarantee you’ll be pleasantly surprised by the freshness and colour this mix can add to your meals.
Another Krispkut® favourite that’s great in winter is Krispkut® Spinach. Here’s a recipe that’s a perfect warmer for the whole family:

spinach, mushroom & chicken pie
Serves 4
1 tablespoon olive oil
1 onion, finely chopped
700g boneless, skinless chicken, chopped
250g button mushrooms, quartered
3 tablespoon + 1 and a half cups flour
1 and a half cups chicken stock
60g parmesan cheese, grated
130g Krispcut spinach
quarter of a teaspoon salt
quarter of a teaspoon baking powder
quarter of a teaspoon sugar
125g cold butter, cubed
5 tablespoons ice water

Preheat the oven to 190°C
Heat the oil in a frying pan and sauté the onion for a few minutes
Add the chicken and cook until browned
Add the mushrooms and cook for 3 minutes then sprinkle over the 3 tablespoons of flour and stir though
Cook for a further 1-2 minutes then stir in the stock
Bring to the boil and cook, stirring occasionally for 5 more minutes
Stir through the parmesan then the spinach until just wilted and season with salt and pepper
Spoon filling into a deep, 5-cup ovenproof casserole dish and set aside
Sift the remaining flour, salt, baking powder and sugar into a bowl and rub in the butter
Mix in the water, kneading gently to bring together (don't over mix)
On a floured surface, roll out to 1 and a half cm thick
Press firmly over the top of the chicken pie
Trim any overhanging pastry and prick the top with a fork and brush with egg or milk wash if liked
Bake for 30- 40 minutes until the pastry is golden
Salads-to-go are all gone!

Welcome our last official newsletter of the year, Lettuce Talk, bringing you the best in fresh food ideas from New Zealand’s leading fresh cut producer. You’ll have noticed we’ve served up lots of fresh changes in 2010, such as our new-look website and salad bag packaging.
Christmas is Coming
Let’s face it – December is a time for eating! But a summery, southern hemisphere Christmas calls for light, fresh, crisp food, like salads. There are some fantastic new summer salad recipes on the back of packs – head to our website to read them in more detail.
Salads are great for Christmas and New Year celebrations, or anything a bit festive. Grabbing a Krispkut™ salad and matching dressing on the way out is an incredibly easy to way to take something delicious to a impromptu get together.
Why not get started on the one below
Fabulously festive in red and green:

cos romaine hearts, avocado, chilli prawn & crisp tortilla salad
2 medium tomatoes
4 tbsp Krispkut™ Ranch Dressing
2 flour tortillas
2 tbsp olive or avocado oil
juice of 1 lime
2 ripe, firm avocados
170g Krispkut™ Cos Romaine Hearts
1 large bunch coriander leaves
400g peeled prawns
2 large mild red chillies, deseeded and chopped
2 cloves garlic, crushed

Cut the tomatoes into quarters and scoop out the seeds and discard along with the core.
Finely chop the tomato and place in a bowl with the ranch dressing and mix well. Set aside.
Heat the grill to hot. Brush the tortillas with one tbsp of the oil and place under the grill for about 1 min until brown.
Break the toasted tortilla into pieces and set aside.
Put the lime juice in a bowl.
Cut the avocados in half, remove the stones and peel.
Cut each half into 4 wedges and toss with the lime juice.
Arrange the Krispkut™ Cos Romaine Hearts on a serving dish along with the avocado and coriander.
In a bowl, toss the prawns with the remaining one tbsp of oil, chilli and garlic.
Heat a wok or frying pan to hot and quickly stir fry the prawns for about 2 mins until cooked (this will depend on the size of the prawns used).
Tip the hot prawns over the salad, drizzle with Krispkut™ Ranch Dressing and scatter the crisp tortilla.
Serve immediately.
Prep time: 15 mins
Cooking time: 5 mins

spinach & snow pea delight
Unique and unusual flavours combine to make this simple and delightful salad.
1 bag krispkut™ Baby Spinach
1 punnet Freshzone® Snow Pea Shoots
1 cup feta cheese (diced finely)
1/2 cup sun-dried tomatoes (chopped)
2 Tbsp oil (we used hemp oil for its nutty flavour)
Place krispkut™ Baby Spinach in a flat salad bowl.
Chop Freshzone® Snow Pea Shoots in half, add to bowl and mix through the spinach.
Add the feta cheese and sun dried tomatoes and lightly toss.
Drizzle with your favourite oil.

With a new-look krispkut™ website featuring recipes and tips for healthy, delicious meals, and new krispkut™ salad packaging in store at the beginning of May, we’ll have plenty to shout about again this year. Our first on-pack promotion for the decade was a huge success with winners from all corners of the country receiving beautiful picnic rugs and hampers.
