curried tropical summer slaw

This tropical twist on traditional coleslaw blends a range of taste and texture combinations, resulting in a refreshing salad addition to any table.

1 bag Freshzone® Herbslaw
1 pawpaw – finely diced
2 cups pineapple finely diced (use tinned if fresh is not available)
1 firm avocado
200g punnet Freshzone® Crunchy Bean Combo
1 x 125 ml krispkut™ Blue Cheese Dressing
juice 1 lemon
2 tsp curry powder

Empty the dressing into a small bowl and add the curry powder
(adjusting  quantity to suit your palette). Put aside for flavours to blend.
Empty the Herbslaw into a bowl.
Add diced pawpaw and pineapple (or any summer fruits you wish).
Pour over flavoured dressing and mix well through.
We like to set aside for at least 30 minutes to allow flavours to fuse

Then just before serving:
Finely dice avocado and squeeze over lemon juice (to prevent it browning too quickly), add to Herbslaw.
Finally add Crunchy Bean Combo and lightly mix through.
VegetarianEmpty onto a serving dish and top with your favourite herb garnish.
