Rocket pesto
...so simple, so attractive, so versatile and so, so divine.
1 & 1/2 cups krispkut™ Mediterranean Wild Rocket
1 cup olive oil
2 teaspoons crushed (or prepared) garlic
50gms pine nuts or walnuts (whichever you prefer)
salt & pepper to taste
30gms shredded parmesan – optional
Place rocket, olive oil, garlic and nuts in a food processor and blend to a texture you enjoy. Add salt and pepper to taste.
Place in an airtight jar, or container, and store in refrigeration for up to 2 weeks.
If choosing to add Parmesan, stir through just before serving.
